I will have to be honest with you...
This isn't exactly my idea of a good leftover meal. However, the Preacher Man LOVES it. In fact, he created it. He's beginning to get into this leftover thing too, which makes my life easier!Here goes....
We had a terrific breakfast complete with scrambled eggs. Of course more scrambled eggs than our tummys could handle.
So....
I saved them.
And, when lunchtime rolled around I put them to good use.
First, a little smashy-smashy mixed with a little mayo until it's a little creamy.
Wah-lah! An egg salad sammy!
Easy-cheesy, but out of the ordinary!
My mom used to make scrambled egg sandwiches for us when we were kids. We loved them! Lots of mayo..........yum.

ReplyDeleteGrowing up, my mom used to make us scrambled eggs with cheese and put it on some bread with Miracle Whip. She used to call them Charlie's Specials, because my dad loved them so much (Charlie is my dad's name)! This is a very nostalgic use of eggs for me...thanks for reminding me about these! :)
